Veggie Recipes to Try

Can’t Go Wrong Soup
aka Basic Tomato Bean Soup

1 can diced tomatoes – undrained
1 can kidney beans – drained
1 can white beans (great northern) – drained
1 can garbanzo beans – drained
1 cups clear broth – vegetable or chicken flavor
Parmesean cheese – fresh grated

Combine tomatoes, beans, and broth and heat for a quick warm soup. Serve with a garnish of Parmesean cheese.

Optional additions to vary the soup:
Sliced frozen okra – cooked
Green beans frozen or canned
Diced chicken style soy vegemeat
Cubed extra firm tofu
Onion diced and sauteed
Cubed red potatoes, cooked, unpeeled
Cooked pearl barley
Basil – Oregano
Use most anything that sounds good to you

Seedy Wheat Crackers
2 cups Whole Wheat flour
3/4 tsp salt
7 Tbsp. olive oil
1 tsp liquid Lecithin
1 tsp sesame oil
1/2 c cold water +/- 1 Tbsp.
1 cup toasted seeds/nuts (Sunflower, Flax, Pumpkin, Pine)

Toast seeds stirring in a dry skillet till slightly brown.  They will pop slightly.
Combine all ingredients.
Roll out to thicknss of pie crust.
Score Crackers with a knife or pastry roller. Sprinkle with Coarse Salt.
Bake at 350° 15-20 minutes.
Careful, they burn easily
